Lemon Balm is grown for its aromatic heart-shaped and toothed leaves. When simply touched, pressed or bruised they releases an intense lemon fragrance. Fresh leaves reveal a sweet lemon taste with a hint of mint. It’s leaves are used to flavor fish, herbal teas, and to infuse oils and sauces. Medicinally, Lemon Balm infusions are used for colds, headaches, and for it’s calming properties.
